Seulincah/Cinacah ( Cold Fruit Serving)

Ingredients:
• ½ pineapple, peeled and coarsely chopped
• 4 raw kedondong ( a type of sour fruit) or unripe mangoes, peeled and minced
• 1-2 medium-size cucumbers, peeled and minced
• 2 teaspoons salt
• 5-6 tablespoons cooked water
• 5 red bird’s eye chillies, ground
• 3 red chillies, ground
• 4-5 tablespoons granulated sugar
• 2 ¼ teaspoons salt

Preparations:
• Mix pineapple, mangoes and cucumbers. Add 2 teaspoon salt, leave for 15 minutes until wilted and discard excess water. Add cooked water, chillies, sugar and the remaining ¼ teaspoon salt.
• Mix evenly until the sugar is dissolved and serve cold.
