Sambal Goreng Daging (Peppered Beef)

Ingredients:
• 450 g beef round steak or any tender cut
• 2 tablespoon vegetable oil
• 1 medium onion, peeled and finely chopped
• 2 cloves garlic, peeled and finely chopped
• 1 teaspoon galangal (laos), ground
• 1 teaspoon salt
• 1 pea-size dried prawn (shrimp) paste (terasi)
• ½ teaspoon brown sugar
• 2 red chillies, thinly sliced
• 2 kaffir lime leaves (daun jeruk purut)
• 2 salam leaves (daun salam)
• 1 tablespoon tamarind (asam jawa) juice
• water or coconut milk (optional)

Preparations:
• Slice beef thinly and set aside
• Heat oil in a frying pan (skillet) and lightly sauté onion and garlic
• Add galangal, salt, dried prawn paste and brown sugar. Fry for several minutes, then add beef slices and mix with spices.
• Add chillies and mix well, then add lime and salam leaves and tamarind juice. Fry until deep brown. A little water or coconut milk may be added to prevent drying out and burning. Serve warm.
