Popaco (Boat Shaped Rice Flour Cakes)

Ingredients:
• 350 cc water
• 300 grams brown sugar
• ½ teaspoon salt
• 2 pandan leaves, shredded and tied into knots
• pandan or banana leaves to make containers
• 250 grams rice flour
• 250 cc thick coconut milk from 1 coconut

Preparations:
• Boil water with brown sugar, salt and pandan leaves until the sugar dissolves. Sieve and leave the syrup to cool.
• Make banana leaf containers ( use double sheets to prevent tearing) of 4x 6 ½ cm size and about 3 cm high. Set aside.
• Mix rice flour, brown sugar syrup and coconut milk, stirring well. Fill banana leaf container 2/3 full with batter and steam for about 45 minutes until done.
