Kue Lapis Beras (Rice Flour Layered Cakes)

Ingredients:
• 950 cc coconut milk from 2 coconuts
• ½ teaspoon salts
• 3 pandan leaves, cut into 5 cm pieces
• 275 grams rice flour
• 75 grams sago flour
• 300 grams granulated sugar food dye, according to preference.
• Oil, for brushing

Preparations:
• Boil coconut milk, slat and pandan leaves. Leave until the mixture cools slightly.
• Mix rice flour, sago flour and sugar. Add boiled coconut milk a little at a time, stirring well until the sugar is dissolved.
• Divide batter into 3 parts; 1 part remains white while the other two parts are dyed into different colors.
• Prepare a 20x20 cm baking tray, brush with oil and heat in a steamer
• Pour about 50 cc batter of one colour, steam for 5 minutes until it sets, add another layer of batter of a different colour, steam again and continue the process alternately until all the batter is used up. Steam another 30 minutes until done.
