King Prawns in Spicy Sauce ( Udang Balado)

Ingredients:
¾ -1 kg ( 1 ½ -2 lb) king prawns washed drained heads removed 1 teaspoon salt 2 tablespoons lime juice 500-750 ml ( 2-3 cups) oil for deep frying 20 petai beans halved lengthways

Seasoning
10 fresh red chillies chopped 5 shallots chopped 1 medium ripe tomato chopped 1 teaspoon salt

Preparations:
1. Put prawns in a bowl and sprinkle with salt and lime juice mix well and leave to marinate 15 minutes tomato and salt several times to chop finely but do not turn into a paste.

2. Heat oil in a wok until very hot drain prawns and pat dry with paper towel deep fry prawns a handful at a time over very high heat until jus cooked about 2 minutes remove and drain on paper tower.

3. Tip out all bur 3 tablespoons of the oil heat then add spice paste and petai beans and stir fry over low medium heat until fragrant and the beans are done 5 to 6 minutes return prawns to the wok and stir to coat well with the chilli serve immediately.
