Ingredients: 125 ml ( ½ cup) vegetable oil 250 g ( ½ lb) dried whitebait heads and black intestinal track discarded 20 petai beans halved lengthways 1 tablespoon lime juice 1-2 teaspoons sugar Spice paste 8-10 dried chillies cut in 2 cm ( ¾ in) lengths soaked to soften 3-4 shallots sliced ½ teaspoon salt Preparations: 1. heat oil in a wok and stir fry dried whitebait until golden and crisp 2 to 3 minutes remove and drain on paper towel. 2. Process chillies and shallots to a paste stir in the salt tip out all but 2 tablespoons of oil from the wok and heat ad petai beans and spice paste and stir fry over medium heat until cooked 4 to 5 minutes. 3. Add fried whitebait lime juice and sugar and mix well serve as an accompaniment. Serves 4-6 Preparation time : 15 mins Cooking time : 15 mins
