Es Gempol ( Rice Ball Iced Drink)

Ingredients:
• 350 grams rice flour
• ½ teaspoon salt
• 350 cc boiling water
• 3 tablespoons sago flour
• boiling water
• 750 cc coconut milk from ½ coconut
• 250 grams brown sugar
• 2 pandan leaves
• ice cubes

Preparations:
• Mix rice flour with salt, then pour in 350 cc boiling water while stirring with a wooden spoon. Knead while sprinkling sago flour a little at a time until the dough can be shaped.
• Shape the dough into lumps as long as your thumb and cut into 1-cm pieces. Press each piece with a finger until the dough is flat and concave.
• Put into a pot of boiling water and cook until the piece float and are done. Drain.
• Boil the coconut milk, brown sugar and pandan leaves, stirring until the sugar is dissolved. Leave to cool. Put in the Gempol balls, add ice cubes and serve.
