Cucumber Pickles

Ingredients:
• 1 medium cucumber, peeled, halved lengthwise, deseeded and sliced
• 1 tablespoon white vinegar
• 2 ½ tablespoons sugar
• 1 teaspoon salt
• 2 ½ tablespoon hot water

Preparations:
Place the sliced cucumber in a bowl. Combine the vinegar, sugar, salt and hot water in another bowl, then add to the cucumber and toss well. Set aside to cure about 1 hour before serving. This pickle keeps for a week in a jar in the refrigerator.

Makes 1 cup
Preparation time: 10 mins + 1 hour to cure
