Amparan Tatak Pisang (Layered Banana Cuts)

Ingredients:
Bottom Layer:
• 225 grams rice flour
• 25 grams sago flour
• ½ teaspoon salt
• 250 grams granulated sugar
• 750 cc thin coconut milk from ½ coconut, warmed
• 10 ripe raja or kepuk bananas, cut in half lengthwise, then cut crosswise into 1-cm pieces
• oil, for brushing

Top Layer:
• 50 grams rice flour
• 350 cc thick coconut milk from 1 coconut
• 1 tablespoon granulated sugar
• ¼ teaspoon salt
• ¼ teaspoon vanilla

Preparations:
Bottom Layer: mix rice and sago flours, salt and sugar. Add warmed coconut milk, stirring evenly. Add bananas and mix well. Pour into oiled baking tray. Steam for about 45 minutes until ¾ done.
Top layer: mix all ingredients and pour on top of the almost-cooked bottom layer. Continue steaming for another 45 minutes until done. Cool before cutting.
